Cod in Bean Sauce
Serves 2 or 3
450 g cod fillet, cut into 1 in (2.5 cm) cubes
1 or 2 tablespoons yellow bean sauce
3 tablespoons dark soya sauce
1 tablespoon rice wine or dry sherry
1 tablespoon white sugar
1 teaspoon fresh green chilli, seeded and cut into very fine rings
2 tablespoons oil
Method
Mix all the ingredients, except the oil, in a bowl and marinade the fish for 1 hour.
Heat the oil in a wok and stir-fry the fish on a medium heat. Cook till golden then add the marinade.
Serve with steamed broccoli.
