Cod in Bean Sauce

Serves 2 or 3

  • 1 lb (450 g) cod fillet, cut into 1 in (2.5 cm) cubes

  • 1 or 2 tablespoons yellow bean sauce

  • 3 tablespoons dark soya sauce

  • 1 tablespoon rice wine or dry sherry

  • 1 tablespoon white sugar

  • 1 teaspoon fresh green chilli, seeded and cut into very fine rings

  • 2 tablespoons oil

Method

Mix all the ingredients, except the oil, in a bowl and marinade the fish for 1 hour.

Heat the oil in a wok and stir-fry the fish on a medium heat. Cook till golden then add the marinade.

Serve with steamed broccoli.
