Haddock in Milk

Serves 4

  • 1¾ lb (810 g) haddock

  • 1¾ pints (1 litre) milk

For The Sauce

  • 4 oz (110 g) butter

  • Juice of 1 lemon

  • 3 tablespoons capers

  • Salt and pepper

Method

Wash and dry the haddock. Put the fish into a saucepan and cover with milk. Bring to the boil and then simmer for 10 minutes.

Meanwhile, melt the butter and add the lemon juice, capers, salt and pepper and keep hot.

Lift the haddock from the milk with a sieve and pop on to a plate -you don't use the milk. Pour over the sauce and put those nasty dreams you had about fish and chip shops quite out of mind.
