Stir-Fried Razor Clams with Garlic & Coriander

Serves 4

  • 2 tablespoons of Vegetable oil

  • 800 g of Razor clams

  • 3 cloves of Garlic, finely chopped

  • Coriander (cilantro) stalks, 1 handful, roughly chopped

  • 100 ml of White wine

  • Coriander (cilantro) leaves: 1 handful, roughly chopped for garnish

  • Salt and pepper to taste

Method

Heat a large pan over high heat with a splash of vegetable oil. Once the pan is almost smoking hot, add the razor clams and cook for 1 and a half minutes. Then add three cloves of chopped garlic, a handful of coriander stalks, and a generous glug of white wine. Cover the pan with a lid and cook for about a minute, or until all the shells have opened. Finish with a handful of chopped coriander leaves, and enjoy.
