Serves 4

We always like to add a few mussels in the shell along with the rest of the mussel meats to improve the finished look. It's important to get the texture of the soup right before adding them, which is why we pass it first through a normal sieve then through an even finer sieve, called a chinois. And finally, we can't stress strongly enough to reheat the mussels with extreme caution. The longer they cook, the more they lose their flavour of the sea.

Simply warm in a pan or microwave.

Remains fresh for 4 days from delivery.  Cannot be frozen.

Full Ingredients

Mussels, Dry white wine, Butter, Celeriac, Leek, Garlic, Fish stock, Saffron strands, Tomatoes, Crème fraîche. Garnish with young flat-leaf parsley.

Allergens: Fish, crustaceans, celery, sulphites.
