Description

A sea oyster brought back in clear for 1 month to soften. Tender to taste, this oyster from Marennes-Oléron.

Size is the numbers calibrated from 000 to 6, with the smaller number indicating the larger-sized oyster. Most people will just know of oysters as size 3, 4 and 2 - listed by popularity. Size is variable in most oyster quality, origin and variety.

Ready to cook or eat raw.

Farmed in rich waters, these oysters are fresh and delicious. Oysters taste of the fresh, clean, salty sea with a hint of green grass, cucumber and melon.

Live and fresh - Farmed in the clean waters off the french coast. Oysters should be stored flat side up and cup side down to ensure they don't dry out.

The Fine de Claire Verte

The Fine de Claire Verte (green) Oyster is less fleshy raised in open sea during a minimum of 3 years along the french Atlantic coast.

The oyster is then finished in our claires, shallow basins with clay with a great light penetration, suitable for the oyster food development.

During the stay in the claires, the naviculus micro algae (blue color) is pigmentating the golden oyster gills, this filtering process give the oyster this beautiful green color.

This time in the claires is offering the oysters a well-earned rest after all oceanic dangers and storms. The ousters are renforcing the flesh and the shell, imparting the subtelties of regional flavours.

The Oyster

Consistent shape, sufficient quantity of flesh, translucent or white mantle, green gills.

Agreeable marine odour.

Finished flavour, typical of the region, balanced taste, salty then sweet, soft to firm consistency, medium longevity on the palate.

This oyster is particularly appreciated by the lovers of green oysters with a refined taste.
