Description

Originally from Marennes-Oléron, it is raised in clear in very low density. Crunchy flesh, sweet taste and long mouth.

Farmed in rich waters, these oysters are fresh and delicious. Oysters taste of the fresh, clean, salty sea with a hint of green grass, cucumber and melon.

Live and fresh - Farmed in the clean waters off the french coast. Oysters should be stored flat side up and cup side down to ensure they don't dry out.

The Pousse en Claire

The Pousse en Claire oyster is an exceptional oyster. The oyster farmers used to savour this oyster as a privilege between insiders and did not wanted to sell this oyster.

The Pousse en Claire is finished in our Claires, shallow basins with clay with a great light penetration, suitable for the oyster food development, during 4 to 8 months with only 2 ousters per square metre.

Thanks to the particular nutritional quality of the claire, the oyster will double or triple its flesh volume and its weight, acquiring an inimitable firmness and flavour typical of the region.

The oyster is taking the time to develop its growth in harmony with its environment this is the reason of its exceptional quality.

The Oyster

Cultured in claires for a minimum of 4 months, 2 oysters per square metre.

Consistent shape, abundant flesh, ivory coloured mantle, white gills.

Agreeable odour of the claire water and algae.

Finished aroma and flavour, typical of the region, predominant sweet flavour, firm consistency, biteable, very long on the palate.

This oyster is particularly appreciated by the lovers of good fleshy oysters with a pronounced flavour, long on the palate.
